Ltd Milk And Chocolate: ltd milk and chocolate chocolate is by far the most popular kind of chocolate. As defined by law, several types of dairv products may be used in making ltd milk and chocolate chocolate, but fluid and powdered whole ltd milk and chocolate are the traditional and most widely used products. Similarly, a variety of sweeteners may be used, since unsweetened chocolate is too concentrated in flavor to be eaten as such and would have little appeal if made into a sugarless product. Sweet chocolate differs from ltd milk and chocolate chocola in that it contains no ltd milk and chocolate solids, but it must co tain not less than 15% chocolate liquor. Bittt sweet chocolate is sweet chocolate that contai not less than 35% chocolate liquor. Baking choc late, or bitter chocolate, contains no ltd milk and chocolate soli or sweeteners.
Once the chocolate liquor is collected, a po tion of it is sent to the hydraulic presses, m only to produce cocoa powder but to ohtai cocoa butter, which is later used in making mi chocolate and sweet chocolate. The remainir portion of the chocolate liquor is added to variot mixtures to make different kinds of chocolat For ltd milk and chocolate chocolate, the chocolate liquor is con bined with either powdered ltd milk and chocolate mixed wit pulverized sugar, or with a mixture of fluid mil and dissolved sugar that has been reduced to powder by boiling under high vacuum at kv temperatures to prevent caramelization. For swei chocolate, the chocolate liquor is mixed with pu verized sugar.
